This is how the patty cakes turned out to take to Gussy's school on Tuesday. Imogen, Spencer and I decorated them as Dragonflies, Butterflies and also Ladybugs. We also flavoured the icing, so it was well and truely sugar overload for the class that afternoon ( sorry mums and dads!!!lol)

Here is the recipe for these delicious little morsels just for you Megs :)
Ingredients:
2 Cups S.r.Flour
1/4 teaspoon Salt
3/4 Cup Caster Sugar
125gm Butter or Marg ( i use butter)softened
2 Eggs
3/4 Cup Milk
1 teaspoon Vanilla Essence

Method:
  • Set oven temperature at hot (200 degrees)and place paper cases into patty pans/muffin tins
  • Have all ingredients at room temp and sift flour, salt and sugar into mixing bowl.
  • Add butter, eggs, milk and vanilla essence.
  • Beat slowly for 1 minute, then increase speed and beat for a further 2 minutes.
  • Two-thirds fill paper cases with the mix, Bake in hot oven for 12-15 minutes.
  • Ice cakes when cold or top with whipped cream and a touch of icing sugar.
  • Enjoy
